| Did you know that you can take advantage of the cold winter weather and brew lagers without a refrigerator? That's right. Most garages are cold enough during the winter months to create a good lagering environment. We've even got some suggestions to make lagering during the hot summer months easier.

7 lbs. Pale Extract
2 lbs. Honey (add in last 10 min.)
1 lb Crystal 60L
1/2 lb Crystal 120L
3/4 lb. Black Patent grain
1/4 lb. Chocolate grain
1/2 lb. Victory grain

1 oz Bullion hops (30 min. boil)
1 oz. Fuggle hops (last 15 min.)
1 oz. Kent Golding hops (last 5 min.)

Irish Ale or Burton Ale yeast
|
| INSTRUCTIONS: |
1. Steep grains in a mesh bag in 2 gallons of water while heating to boiling. Do not boil grains.
2. Remove grains and add malt extract. Stir to thoroughly dissolve, and bring to boiling.
3. Add Bullion hops and begin timing a 30 minute boil. Boil gently and stir frequently to avoid scorching.
4. With 15 minutes remaining in the boil, add 1 oz. of Fuggle hops.
5. With 5 minutes remaining in the boil, add the Kent Golding hops. At the end of the total 30 min. boil, cover lettle and remove from heat.
6. Cool (as always we strongly recommend using a wort chiller) until temperature is below 80 degrees F before putting in fermenter, adding cool water to make 5 gallons total, and adding yeast. Be certain temperature of the mixture is 75 degrees or below. If you don't already have a Thermometer Strip on your fermenter, GET ONE !! They are only $2.95, and are one of the best tools you can have.
