Spiced Holiday Amber (mildly spiced and richly smooth)

 GRAINS/MALT  HOPS  YEAST/EXTRAS
8lbs. Pale Malt Extract
1 lb. Crystal 40L
1/2 lb. Crystal 60L
1/2 lb. Wheat grain
1/4 lb. Chocolate grain
Spices to be added in last 10 minutes of the boil:
1 - 2 inches Cinnamon Stick
1/2 tsp. Nutmeg
2 inches split Vanilla Bean, or 2 Tbsp. Vanilla Extract
Spices to be added in last 3 days of fermentation, (or secondary):
1/4 tsp. Nutmeg
1 tsp. coarsly chopped Cinnamon Stick
1 inch split Vanilla Bean, or 1 Tbsp. Vanilla Extract
1 oz. Northern Brewer hops (boil) German Ale -or- East Coast Ale Yeast
 INSTRUCTIONS:
1. Steep grains in mesh bag placed into 2 gallons of water while heating to boiling.
2. Remove grains and add malt extract. Stir to completely dissolve.
3. Add the Northern Brewer hops and begin a 30 minute boil.
4. Simmer, stirring frequently to avoid scorching. In the last 10 minutes of the 30 minute boil, add the spices indicated.
5. Cool to 70 - 75 degrees F before adding the yeast chosen.
6. Ferment as usual until fermentation slows, and then add the second group of spices (~ last 3-4 days of fermentation), or add them in secondary fermenter if two stage method is used.
7. Bottle as usual when complete using 3/4 cup Priming Sugar.
 NOTES:
This recipe may be made without the Special Ingredients and will make a delicious everyday Amber Ale. At this time of year beers with a bit of a twist become more popular as brewers begin planning for the holiday celebrations and family gatherings.
